Leader Södermanland has granted 450,200 kronor to Frankly Foods and Liura to develop and test a method for producing garum based on local by-products from meat production in Södermanland.
Garum is an ancient fermented flavor product with roots in antiquity, and the project aims to utilize resources that are currently not fully utilized and refine them into an exclusive flavor enhancer for both restaurants and home cooks.
Frankly and Liura met during the competition Ät!Sthlm, where the idea of a Södermanland garum emerged. With the project support, they can now establish a structured collaboration and carry out joint product and method development. The work will also contribute to creating a model for how more actors in the region can refine local by-products.
The project is primarily carried out in Hälleforsnäs and Gnesta, where both companies operate. By combining knowledge in raw material management, fermentation, and gastronomy, the project aims to strengthen local food processing, increase resource efficiency, and reduce waste.
The goal is to have a fully developed garum product by the end of the project, as well as a plan for commercial production on a larger scale, which can contribute to a more sustainable and competitive business environment in Södermanland.
